Cinnamon buns are made from a sweet, yeast bread dough that is rolled
out, sprinkled with sugar and cinnamon and rolled up. It is then cut
and placed in pans to bake. When baking is complete, rolls are spread
with white icing.

This process produces dough layers that are
substantial in size with the cinnamon flavoring between these layers and
usually quite large in size.

Sticky buns are also prepared from a
sweet yeast dough. But this is where the similarities end! The dough is
rolled and stretched by hand into a very thin layer which is then
spread with melted butter, chopped fruits (such as currants, raisins,
etc.), sugar and imported Vietnamese cinnamon.

The dough is then
rolled up and cut into individual rolls. These are placed into a
prepared pan which contains a light caramel sauce prepared from melted
butter, brown sugar and whole and chopped nuts (pecans or walnuts).

After
baking is complete, the pan must immediately be flipped over onto foil
or a plate and left in place for several minutes to allow the “sticky”
sauce to run down between the layers. They are now ready to eat, ship or
freeze for later use.

This process produces a very different end
product from typical cinnamon buns due to the thin layers, fruits and
nuts and the “sticky” component. This vendor has also developed some
“gourmet” sticky buns using a variety of fruits, citrus zests, an
assortment of nuts and incorporating brandy or liqueurs into the
“sticky” sauce and between the layers.
